Rice Krispie FUN!

I found this sweet and easy "Rice Krispie Cupcake Treat" recipe at blog.shopdirtylaundry.com and thought you might enjoy it! Such a clever idea!

 Melt one 10 oz package of strawberry marshmallows and 3 tablespoons of butter in a pot.

The strawberry marshmallows and better get  REALLY pink!
Mix in the rice krispies. It's hard to see in the photo, but the mixture took on some pink swirls.

Press the mixture into the cupcake tin. They form very quickly and are easy to get out.

Here they are ready for the icing.


The Betty Crocker icing was nice and light. I ran out of strawberry icing for the seven cupcakes I made. But I have some Betty Crocker fluffy white that I swirled with the strawberry icing for the last two.

They came out delicious! The rice krispie treats had a subtle strawberry taste, Kind of like a strawberry shortcake ice cream bar. The strawberry icing enhanced the flavor.

Here is a fun way to dress up your cupcakes! 
This is also a great treat for your little munchkins to help with! What could be better than getting to eat your cupcake and the topper!?!

Just make a regular batch of Rice Krispie treats. Then use a mini heart cookie cutter to cut out little hearts. Stick a lollipop stick into the center of them and leave the hearts out for a few hours to let them harden a bit.
(If you dip them in the chocolate right away they will fall apart.) Melt some chocolate candy melts in the color of your choice and simply dip your mini hearts in and cover completely! Gently shake off the excess chocolate and set them on a piece of parchment paper...add some sprinkles to dress them up a bit. Let them dry and then stick them into your cupcakes!
